Exclusive cold press processing in a specialized mill within 12-24 hours after the harvest of the olives.

Extra Virgin Olive Oil made with a blend of different olives with prevalent presence of “Coratina” and “Leccina” types of olives.

CHEMICAL ANALYSIS
We are happy to accomplish one of our goals: transparency. Our Extra Virgin Olive Oil “Murge di Laterza”, known also as “Olio di Nonno Pep”, is periodically analyzed by the laboratory Chemiservice, accredited by Accredia.
The analysis refers to the 2022 harvest and was conducted on November 7, 2022.

The values of our olive oil are within all parameters legally required by the European Union for defining and labeling it as “Extra Virgin”. Not only does our oil respect the law and met the standards: it even exhibited an excellent performance! This is such a great satisfaction for us. THE FRUIT OF OUR PASSION
We personally check the quality of our olives, tree by tree. Plowing and pruning (done only when actually necessary) are intense yet gratifying work periods, where we take time to focus on each and every single tree with passion. The harvest of the olives is done when the fruits are still on the stems, with a mainly manual work that best respects the trees.

STRICTLY COLD-PRESSED
The milling is strictly done through mechanical cold-pressed processing. We bring our freshly harvested olives to a modern mill, where the maximum preservation of the taste and high standards of safety and cleanliness are guaranteed.

THE INTENSE PUGLIESE FLAVOR
Our oil has a fruity flavor with a slightly bitter aftertaste, with an intense fragrance. A peculiar trait is the strong aftertaste that slightly pinches the throat: this is a fundamental trait that reveals the quality of its nutrients, specifically important polyphenols such as oleocanthal and oleuropein.
